GREAT NORTHERN BEAN SOUP

1-2 lbs. Great Northern Beans
5 Nice sized potatoes
1 Lrg. Onion
1 Ham Shank or Smoked Turkey
1/2 stick of butter or margarine
Ground Cumin
Dash of Black Pepper

(You can also mix other beans such as pinto or  black beans in with the soup, also other favorites like corn).

Sort and wash your beans.  If you are sensitive to gas, soak you beans over night.
In a stock pot, half fill the pot with water and season with salt, (sea salt is excellent to
use).  Put in your ham or turkey and cook covered for about an hour on medium to
high heat.  Pour in your washed beans into the water, recover and continue to boil.
As beans get done a thick broth will begin to develop.  Put in your skinned cubbed potatoes, your large chopped or sliced onion, your half stick of butter or margarine.
Let boil until potatoes are almost done, then put in at least 2 teaspoons of gound
cumin and a dash of black pepper.  Cumin will give you soup a rich exotic flavor.
Use it to taste.  Before to watch and stir you soup frequently as stock pots have a
tendency to scorch and burn food.
Make yourself a nick hot cake of corn bread to go with your soup, sit back and enjoy.

Made with lean cuts of beef and plenty of vegetables, this is for sure one of the best healthy slow cooker recipes for those on a gluten free diet.
Preparation Time:10 min
Cooking Time:10 hr
Ingredients
  • 2 pounds lean chuck roast, cubed into 2-inch pieces
  • 1 medium zucchini, grated
  • 1 large carrot, grated
  • 1 apple, grated
  • 1 medium onion, finely diced
  • Salt and black pepper, to taste
  • FOR THE SAUCE:
  • 1/2 cup ketchup
  • 1/2 cup applesauce
  • 1/4 cup cider vinegar
  • 2 tablespoons steak sauce
  • 2 tablespoons honey
  • 3 tablespoons soy sauce
  • 1 tablespoon hot sauce
  • 1 teaspoon red pepper flakes
  • 1/2 cup water
Instructions
  1. To make the sauce, stir together all of the sauce ingredients and set it aside.
  2. To load the slow cooker, stir together the grated zucchini, apple, carrot and onion and place it into the bottom of the slow cooker.
  3. Add the beef with some salt and pepper to taste and pour over the sauce.
  4. Cover it, set the slow cooker to low and let it cook for 8 to 10 hours.
  5. After about the first two hours you’ll want to skim off any scum that rises to the top. If you won’t be around to do this step, I’d suggest you start with meat that has been browned prior to adding it to the pot.
  6. When the beef is done, raise the temperature to high, remove the beef, and shred it before returning it to the pot to simmer uncovered until the sauce has reduced to a consistency you’re happy with and then it’s ready to serve.
Notes
If you are following a gluten free diet you’ll need to use gluten free soy sauce. Also, be sure to check all of the ingredients that you add to the sauce to ensure there is no gluten. Instructions for the coleslaw are covered in the video tutorial.
